Basic Cream Cheese Frosting

4 oz. neufchatel (cream) cheese
1 tsp. vanilla extract
1 c. confectioners sugar

1. Combine all ingredients in a small bowl. Beat on high with an electric mixer until creamy. Spread on top of cupcakes, banana bread, etc.
