Chipotle's Shredded Beef Recipe

Inspired by this recipe.

1/3 c. apple cider vinegar
3 tbsp lime juice (i only had lemon, so i used it)
2 Chipotle Peppers canned in Adobo Sauce (Recipe called for 4 but I'm a spice wimp...2 was good!)
1 small to medium sweet onion
5 cloves garlic
4 tsp cumin
2 tsp oregano
1 1/2 tsp ground black pepper
1 1/2 tsp salt
1/8 tsp ground clove
2 tbsp oil
4 lb roast (top round, bottom round, chuck, etc.)
1 c. beef broth

Combine the vinegar to the clove in a blender and puree.

Put the oil in the bottom of the crock pot and put the rost on top. Pour half of the sauce on top of the roast. Flip the roast and pour the remaining half of the sauce on the roast. Add the beef broth to the crock pot. Cook on low for 8 hours.

This had great flavor and was pretty delicious!

Beef & Broccoli Crockpot

Inspired by this recipe.

1 lb. round steak, cubed
1 c. water + beef bouillon
1/2 c. low sodium soy sauce
1/3 c. dark brown sugar
1 tbsp. sesame oil
3 garlic cloves, minced
2 tbsp cornstarch
4 tbsp sauce from the crockpot
frozen stir fry veggi's
rice, cooked

1. Add sauce ingredients to crock pot (except cornstarch). Whisk to combine.

2. Add beef and stir.

3. Cook on low for 6 hours.

4. When ready, make rice and stir fry veggi's.

5. Put veggi's and beef over rice.

Italian Roast Beef

Italian Roast Beef (from here)

Notes: This is really good and smells AMAZING while it cooks.

1 1/2 c. water
3 cubes beef bouillon (or equivalent in broth/bouillon)
1 tsp. salt
1 tsp crushed garlic
2 tbsp Italian Seasoning
1 tsp freshly ground black pepper
2 tbsp dired oregano
2 tbsp dried basil
1/2 tsp dried red pepper flakes (optional - I didn't add. I'm a spice wimp.)
4 lbs rump roast (I just use whichever roast is on top on the freezer :) )
1/2 c. vegetable oil (I didn't add this last time, and it was fine.)

Put the roast in the crock pot. Put water and beef bouillon. Sprinkle spices over roast.

Beefy Rice and Beans

Beefy Rice and Beans (my own brain)

Notes: I tried making this today, and it smelled AMAZING. The taste was delicious...but the rice FLOPPED big time. I've never made crunchy rice before today, but this stuff is a crunchy munch. However, if it wasn't crunchy, it'd be delicious!

1 cup uncooked rice
2 cups water
1 packet Lipton Onion Soup Mix (I use the onion soup mix spices listed below)
  • 8 tsp. dried minced onion
  • 1 tsp. onion powder
  • 4 tsp. beef boullion
  • 1/4 tsp celery salt
Combine rice, water, and spices. Cook according to rice directions.

1/2 lb. ground beef
1 can red beans

Brown ground beef. Add beans.

After rice is finished cooking, add beef and beans to the rice.

Simple Sloppy Joes

Notes: I love this recipe. It's better than any mix I've ever had.

2 lbs. ground beef (I almost never put this much in.)
1 large onion (I also usually don't put this much in since I precook my beef with onion)
2 garlic cloves, minced
1 8oz can tomato sauce
1 6oz can tomato paste
1/2 c. ketchup
1/3 c. packed brown sugar
2 tbsp soy sauce
buns, bread, etc.

In a skillet, cook beef, onion and garlic over medium heat until meat is no longer pink; drain. Stir in tomato sauce and paste, ketchup, brown sugar and soy sauce; mix well. Bring to a boil. Reduce heat; cover and simmer 15-20 minutes, stirring occasionally. Spoon about 1/2 c. meat mixture onto each bun.

Crockpot Hamburger Soup

Crockpot Hamburger Soup

- 10/9/2010: This was DELICIOUS and SO EASY (especially since I cook my ground beef and freeze it). I didn't add the diced tomatoes for obvious reasons, and I halved the recipe. I also only cooked it for 6 hours and added the green beans and potatoes a couple of hours before we were going to eat it. I think you could use real potatoes and just put them in from the start if you wanted too, but the canned ones worked just fine and were yummy. I really enjoyed it.

* 1 whole Onion, Chopped
* 2 pounds Hamburg, Fried
* 3 cans (14 Oz. Can) Beef Broth
* 2 cans (15 Oz. Can) Kidney Beans
* 2 cans (8 Oz. Can) Tomato Sauce
* 1 can 28 Oz. Can Diced Tomatoes
* 2 teaspoons Dried Parsley
* 1 teaspoon Dried Basil
* ½ teaspoons Thyme
* ¼ teaspoons Pepper
* ½ teaspoons Salt
* 1 Tablespoon Chili Powder
* 1 can (14.5 Oz. Can) Diced Potatoes
* 1 can (14.5 Oz. Can) Green Beans, Diced Or String

Add all ingredients to a crock pot, except the potatoes and green beans. Cook on low for about 6 hours, stirring about every 30 minutes or so.

After the 6 hours, add the diced potatoes (drained) and the green beans (drained), and cook for another 2 hours on low.

Serve with crackers or bread, whichever you prefer. The spices in this recipe complement the ground beef, and it is really good. Believe me, before I tried, I never thought a soup made with ground beef would have any flavor.

Skillet Tacos

Skillet Tacos

* 1 pound ground beef
* 1 small red onion, chopped
* 1 1/2 cup frozen corn
* 10 corn tortillas (6 inches), cut into 1-inch pieces (I use my pizza cutter to do this)
* 1 bottle (8 ounces) taco sauce (I used mild)
* 1-1/4 cups shredded cheddar cheese, divided

1. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain.
2. Rinse frozen corn in a colander with warm water and drain.
3. Add the drained corn, taco sauce, and 1 cup cheese to meat until well mixed.
4. Mix in tortilla pieces and heat through.
5. Sprinkle with remaining cheese. Serves 5-6

BBQ Ribs

  • 1 cup water
  • 1/2 cup soy sauce
  • 3 lbs. baby back ribs
  • 1/2 cup Shirley J BBQ sauce mix, plus extra to season ribs
  • 1 1/3 cup root beer (just a little less than a can I used the MUG brand)
  1. Season ribs with Shirley J BBQ seasoning. You want a good even coating. Place ribs in fridge for 2 hours.
  2. In a broiler pan, place the water and soy sauce in the bottom of the pan. Place the insert of the boiler pan on the pan. Your gonna create a nice steam bath for this ribs.
  3. Place ribs on the pan. Completely cover the ribs in the pan with aluminum foil. You want it nice and sealed to keep that steam in there. Cook in a 200 degree preheated oven for 4-6 hours. low and slow is the trick here folks.
  4. Meanwhile in a saucepan, combine the root beer and 1/2 cup Shirley J BBQ Sauce Mix together and simmer for five minutes. Set aside until ribs finish in oven.
  5. Remove ribs from pan and brush all over with about 2/3 cup of the bbq sauce.
  6. Place the ribs on a preheated grill. We keep the temp in between high and sear. You want to get the sauce to coat the ribs and get a little charred. Cook for just a few minutes on each side. Serve with remaining sauce. Enjoy. Serves 4.

Fran's Thai Style Beef Curry

2 tbsp oil
3 tbsp thai red curry (use less..too spicy. 2 1/4 to 1/2 is perfect)
2 1/2 c. coconut milk (I used 2 16 oz cans)
2 1/2 lbs. chuck roast, cut in 1 inch cubes (used stew meat or chicken breasts)
salt, to taste.
2 tbsp cilantro, chopped

Heat oil over low heat. Add curry paste. Cook and stir 5 mins. Add coconut milk. Cook 3 mins longer. Add beef cubes. Bring to a boil. Cover and simmer on low heat 2 1/2 hours, stirring occasionally. Cook until the meat is tender. Don't add any salt at this point because the sauce will be reduced later and may end up too salty.

We used chicken and beef and cooked the meat first and then added.

10/2010 - I made this yesterday without cooking the chicken first. I just dumped in the coconut milk mixture and let it cook for 2 hours. It was AWESOME. I stirred it after an hour. I used about 2 1/4 to a 1/2 of curry paste. It was the perfect spiciness. I could actually handle it without needing yogurt afterward.

We also added potatoes and carrots when we put the raw chicken in. Very good! Broccoli as a side is also yummy.

Best Beef Stew

2 lbs beef stew meat, cut into 1 inch cubes (I only used 1 lb)
1/4 c. all purpose flour
1/2 tsp. ground black pepper
1 clove garlic, minced
1 bay leaf
1 tsp paprika
1 tsp Worcestershire sauce
1 onion, chopped (I used dried minced onions)
1 1/2 c. beef broth
3 potatoes diced
4 carrots sliced
1 stalk celery chopped (didn't have it, so i didn't use it)

1. Place meat in slow cooker. In a small bowl mix together flour, salt, and pepper. Pour over meat, and stir to coat meat with flour mixture. Stir in the garlic, bay leaf, paprika, Worcestershire sauce, onion, beef broth, potatoes, carrots, and celery.

2. Cover, and cook on Low setting for 10 to 12 hours, or on high setting for 4 to 6 hours. (I cooked on high for 5ish hours.)

The meat was so tender it fell apart when we scooped it up. We had it with rice, and it was grrrreat!

Beef & Barley Soup

1 3/4 cups beef broth
1 cup water
1 tsp. dried parsley flakes
1 can diced tomatoes, undrained
1 1/2 cups cooked roast beef
1/2 cup diced celery
1/2 cup chopped onion
1/2 cup diced carrots
2 cups shredded cabbage
1 cup diced raw potatoes
1 can green beans, drained
3 tbsp. barley
1/4 tsp. pepper

Combine all ingredients into a crock pot, and mix well to combine. Cook on low for 8 to 10 hours. Stir well before serving.
