Dairy Free Hamburger Helper #2

Dairy Free Hamburger Helper #2 (from here)

2 pounds ground beef or bison
3 - 4 Tablespoons taco seasoning
2 cans garbanzo beans, drained and rinsed
garlic powder
minced onion
rice milk
12 oz noodles, cooked

Brown the ground beef or bison and drain.
Sprinkle with taco seasoning and up to 1 cup water.
Simmer until most of water is absorbed. 
Put beans, garlic powder, and minced onion in food processor.
Process, adding rice milk, until mixture is smooth.

Stir bean mixture into meat.
Add rice milk if needed to achieve desired consistency.  We like ours like a thick sauce (about the consistency of chili).
Add salt if needed.

Ingredients
1 lb. ground beef ($1.29) Bought when on sale for $1.29/lb.
1 onion, chopped ($.20)
garlic cloves, crushed ($.10)
Pepper
3 Tbsp dairy free margarine or butter ($.30)
3 Tbsp flour ($.05) Use rice flour to make this GF
3 cups milk ($.30) Use rice milk to keep dairy free
1 cup water
2 cups whole wheat elbow or shell pasta noodles ($.50) On sale this week…1 lb. for $1; Use rice pasta noodles for GF version
Salt and pepper, to taste
16 oz bag of frozen peas ($.68) Bought from Walmart back in June
*Note: I did cook the remaining shells in another pot and other 1/2 lb. of ground beef. I used it to make “spaghetti shells” for the boys’ lunch tomorrow! It seemed the most logical way to use up the other 1/2 lb. meat and pasta noodles!
Directions
1. In large skillet, brown ground beef with chopped onion and crushed garlic cloves. Season with pepper. Once fully cooked, drain and rinse ground beef. Do not return beef to the skillet. Yet.
2. In same skillet, add margarine or butter. Once melted, whisk in flour to form a paste. Quickly whisk in milk until no clumps remain. Cook for 3-4 minutes over medium heat, until sauce starts to bubble and thicken. Once sauce starts to thicken, add 1 cup of water and 2 cups of pasta shells. Stir through. Add 1 lb. of meat and mix together. Cover and cook over medium heat for 12-15 minutes, or until pasta shells have cooked through. Stir often. Season with salt and pepper to taste.  Remove from heat.  Sauce will thicken slightly after removing from heat.
3. Prepare frozen peas as indicated on package instructions.
4. Serve “Hamburger Helper” Pasta with Peas.

Chili-Pasta Skillet

Chili-Pasta Skillet (inspired by this recipe)

1 lb. ground beef
3/4 c. chopped onion
1 15oz can red kidney beans, black beans, or red beans, rinsed and drained
1 14.5oz can diced tomatoes, undrained
1 8oz can tomato sauce
1 4oz can diced green chile peppers, drained
1/2 c. dried shell pasta
2 to 3 tsp chili powder
1/2 tsp garlic salt
cheese if able

Start pasta. Cook meat and onion. Add remaining ingredients (except cheese) and simmer until pasta is finished cooking. Add pasta to the dish. Enjoy.

Holly's Chili


1/2 lb bacon, crispy and cumbled
1 lb ground beef, browned and drained
1 lg onion chopped, I like to cook the onion with the beef.
1/2 cup packed brown sugar
1/3 cup ketchup 
1/2 cup BBQ sauce
2 tbl mustard
3/4 tsp chili powder
1 tsp salt
1/2 tsp pepper
2 16 ounce cans red beans, drained
1 16 ounce can ponto beans, drained
1 16 ounce can black beans, drained
1 16 ounce cans pork and beans
1 16 ounce can mexican style chopped tomatoes. I usually use chili ready tomatoes.
2 to 4 cups tomato juice. I usually use one can of tomato sauce and add about a cup of water. It taste the same and is cheaper.

Preheat oven to 350. Combine all ingredients in large bowl. Pour into a large lightly greased casserole dish. Bake covered for one hour.

Cocktail Meatballs

Cocktail Meatballs (originally from here - but I modified as it says below)

Notes: These were delicious. I didn't actually measure everything, and I think I added slightly too much vinegar from the chili sauce recipe). I tried adding a little more sugar to counter it, and it sorta helped. I would definitely just put a dash of vinegar next time.

1 lb. ground beef
1 egg
2 tbsp water
1/2 c. bread crumbs
3 tbsp minced onion

1 (8oz) can jellied cranberry sauce
3/4 c. chili sauce (see recipe below)
1 tbsp brown sugar
1 1/2 tsp lemon juice
- I added a little bit of soy sauce and Worcestershire sauce

1. Preheat oven to 350.
2. Mix ground beef, egg, water, bread crumbs, and minced onion. Roll into small meatballs.
3. Bake in preheated oven for 20 to 25 minutes, turning once.
4. In a slow cooker or large saucepan (I did the sauce pan) over low heat, blend the sauce ingredients and add meatballs. Simmer for 1 hour before serving.

Chili Sauce Recipe (from here)

1 c. tomato sauce
1/4 c. brown sugar
2 tbsp vinegar (i used cider vinegar, but not for any particular reason)
1/4 tsp allspice

Asian Inspired Meatballs

Notes: I want to try these..or some variation of these at some point in time.


Ingredients

    • 1 lb ground beef
    • 1/3 cup milk
    • 1/3 cup rolled oats
    • 1/3 cup saltine crackers, crushed
    • 1 eggs
    • 1/2 cup onions, chopped
    • 2 teaspoons garlic powder
    • 1 teaspoon salt
    • 1/4 teaspoon pepper
    • 1 teaspoon chili powder
    • 2 cups catsup
    • 1 cup brown sugar
    • 1/2 teaspoon liquid smoke
    • 1 teaspoon dried ginger ( or 1/2 tsp fresh grated)
    • 1/2 teaspoon sesame oil
    • 2 tablespoons molasses

Directions

  1. Preheat oven to 350°F.
  2. Thoroughly combine ground beef, milk, oats, crackers, egg, 1/4 cup onion, 1 teaspoons garlic powder, salt, pepper and chili powder for meatballs.
  3. Form meat mixture into 1-inch balls and place in a 13x9-inch baking pan.
  4. Combine catsup, brown sugar, liquid smoke, 1 teaspoons garlic powder, 1/4 cup chopped onion, ginger and sesame oil. Stir mixture until sugar dissolves (will be a bit grainy).

Brown ground beef. Add 1 can mushroom soup with milk to desired consistency; add salt and pepper. Add french style green beans. Serve over mashed potatoes.

Southwestern Casserole

Southwestern Casserole (from Taste of Home Freezer Cookbook)

Notes: This recipe makes two casseroles. One for eating now and one for freezing later if desired.

1 package (7oz) elbow macaroni
2 lbs ground beef (I used 1 1/4 lbs and would maybe go less meat and another can of beans next time)
1 large onion, chopped
2 garlic cloves, minced
2 cans (14.5oz) diced tomatoes, undrained
1 can (16oz) kidney beans, rinsed and drained
1 can (6oz) tomato paste
1 can (4oz) chopped green chilies, drained
1 1/2 tsp. salt
1 tsp chili powder (I added more chili powder and cumin to taste after I had it all mixed together)
1/2 tsp ground cumin
1/2 tsp pepper
2 cups shredded Monterey Jack Cheese (didn't add, but I'd probably use cheddar anyway)
2 jalapeno peppers, seeded and chopped (didn't add b/c we didn't have and I can't handle the spice)

Cook macaroni according to package directions. Meanwhile, in a large saucepan or Dutch oven (I used a skillet and it was too small. Definitely needed a bigger pan for this), cook the beef, onion and garlic over medium heat until meat is no longer pink; drain (I used turkey so I didn't drain). Stir in the tomatoes, beans, tomato paste, chilies and seasonings. Bring to a boil. Reduce heat; simmer uncovered for 10 mins. Drain macaroni, stir into beef mixture.

Transfer to two greased 2qt baking dishes (I used 9x13 pans). Top with cheese and jalapenos (didn't do). Cover and bake at 375 for 30 mins. Uncover and bake 10 mins longer until bubble and headed through. I baked at 350 convection for 20 mins and didn't cover/uncover since I didn't put cheese on it.

Serve the one casserole. Let the other cool and freeze for up to 3 months.

To use the frozen casserole, Thaw in refrigerator for 8 hours. Remove from refrigerator 30 mins before baking. Cover and bake at 375 for 20-25 mins or until heated through. (I would probably just pop it in the oven stright from the freezer at 350 for 30-45).

Bean and Burger Pockets

Bean 'n' Burger Pockets

This is SO GOOOOOOOOOD! And, it makes a lot, so there is a lot of left overs. We ate it over Naan instead of Pita's, but I'm sure it would even be good by itself without bread.

1 1/4 lb. ground beef
1 can (14 1/2 oz.) diced tomatoes, undrained
1 can (8 oz) tomato sauce
1/2 c. chopped onion
1 garlic clove, minced
1 tablespoon brown sugar
1 tsp. seasoned salt
1 tsp. chili powder
1/2 tsp. ground cumin
1/8 tsp. each dried thyme, savory, majoram, oregano, and parsley flakes
1 can (8 3/4 oz) navy beans, rinsed and drained
1 can (8 3/4 oz) kidney beans, rinsed and drained
1 can (8 3/4 oz) lima beans, rinsed and drained
5 pita breads, halved
1/2 cup shredded cheddar cheese

In a heavy sauce pan or dutch oven, cook beef over medium heat until no longer pink; drain.

Add tomatos, tomato sauce, onion, garlic, brown sugar, and seasonings. Cover and simmer for 1 hour stirring occasionally (we added beans at this time too and it was fine).

Stir in beans; heat through. Spoon about 1/2 cup. into each pita half. Top with cheese if desired.

Taco Casserole

Taco Casserole

Notes: This was really good! Brandon really liked it. I think next time I wouldn't even bother baking it. The chips on the bottom just got chewy instead of crunchy, so next time, I would just heat it up on the stove and put it over chips. I left out the tomato and cheese to please our picky-ness. I would maybe drain half of the beans (we used red beans) if I don't bake it.

1 lb. ground beef
1 can. chili beans in sauce, undrained
1 8oz. tomato sauce
2 tbsp Old El Paso taco sauce, picante sauce or salsa
2 to 4 tsp. chili powder
1 tsp. garlic powder
2 c. coarsely broken tortilla chips
8 medium green onions, sliced (1/2 c.)
1 medium tomato, chopped (3/4 c.)
1 c. shredded cheddar or monterey jack cheese

Heat oven to 350. In a 10-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until brown; drain. Reduce heat to medium. Stir in beans, tomato sauce, taco sauce, chili powder and garlic powder. Heat to boiling over medium heat, stirring occasionally.

In ungreased 1 1/2 quart casserole, place tortilla chips. Top with beef mixture. Sprinkle with onions, tomato and cheese.

Bake uncovered 20 to 30 minutes or until hot and bubbly. Arrange additional tortilla chips around edge of casserole if desired.

Bake 25 to 30 minutes.

Baked Meatballs

Note: Good! Mom makes these often. She turns the recipe into meatloaf and grills for 30 mins.

2 lbs. extra lean ground beef or turkey
1/2 c. egg substitute (equal to 2 eggs)
1 tbsp. dried parsley
1 c. oatmeal or cracker meal or oat bran
1 c. skim milk
1 tsp salt (optional)
1/2 tsp. ground pepper
2 tsp. onion powder
1/4 tsp. nutmeg

Preheat oven to 425 degrees. Mix all ingredients. Shape into 1 1/2 inch balls. Arrange on two baking sheets that have been sprayed with non-stick coating. Bake for 12 minutes or until done. Freeze 12 to a pack.

Homemade Sausage

Homemade Sausage from Lean Ground Beef or Turkey (from here).

  • 1 pound of ground turkey or very lean ground beef
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of garlic salt
  • 1/4 teaspoon of pepper
  • 1 teaspoon of cumin
  • 1/2 teaspoon of sage
  • 1/4 teaspoon of basil
  • 1/4 teaspoon of oregano



  • I just added it to the pan as the meat was browning. It was realllllly good! I'd maybe cut the salt down a little bit. Between the salt in the sausage and the salt in the gravy, breakfast was a little salty. I also didn't have sage, so I just left it out.

    Enchilada Pie from Healthy Cooking Magazine

    1 pkg. (12 oz.) frozen vegetarian meat crumbles *A
    1 cup chopped onion
    1/2 cup chopped green pepper *B
    2 tsp. canola oil
    1 can (16 oz.) kidney beans, rinsed & drained
    1 can (15 oz.) black beans, rinsed & drained
    1 can (10 oz) diced tomatoes & green chilies, undrained *C
    1/2 cup water
    1 1/2 tsp. chili powder
    1/2 tsp. ground cumin
    1/4 tsp. pepper
    6 whole wheat tortillas (8 in.)
    2 cups (8 oz.) shredded reduced fat cheddar cheese

    1. Cut three 25-in. x 3-in. strips of heavy duty foil; crisscross so they resemble spokes of a wheel. Place strips on the bottom and up the sides of a 5-qt. slow cooker. Coat strips with cooking spray. (I didn't do this)

    2. In a saucepan, cook meat crumbles, onion & green pepper in oil until vegetables are tender. Stir in both cans of beans, tomatoes, water, chili powder, cumin & pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes.

    3. In slow cooker, layer about 3/4 cup bean mixture, one tortilla & 1/3 cup cheese. Repeat layers five times. Cover and cook on low for 4-5 hours or until heated through.

    4. Using foil strips as handles, remove the pie to a platter. (I didn't do the foil, but with the cheese as part of each layer it stayed together pretty well anyway.)

    Yields 8 servings, 367 calories, 11 grams of fat per ingredients above.

    *A - I used 1 lb. ground beef
    *B - used banana peppers because that's what I had in the freezer
    *C - used 1 - 14.5 oz can of diced tomatoes & 1 - 4 oz. can of diced green chilies

    Notes: This was good, but I felt it needed a bit more sauce than the diced tomatoes & chilies provided. I would probably use a can of enchilada sauce and divide between the layers. With that said, the spices could probably be eliminated.

    Notes: I love this recipe. It's better than any mix I've ever had.

    2 lbs. ground beef (I almost never put this much in.)
    1 large onion (I also usually don't put this much in since I precook my beef with onion)
    2 garlic cloves, minced
    1 8oz can tomato sauce
    1 6oz can tomato paste
    1/2 c. ketchup
    1/3 c. packed brown sugar
    2 tbsp soy sauce
    buns, bread, etc.

    In a skillet, cook beef, onion and garlic over medium heat until meat is no longer pink; drain. Stir in tomato sauce and paste, ketchup, brown sugar and soy sauce; mix well. Bring to a boil. Reduce heat; cover and simmer 15-20 minutes, stirring occasionally. Spoon about 1/2 c. meat mixture onto each bun.

    Cheeseburger Soup - from Joan

    1/2 lb. ground beef
    1/2 cup chopped onion
    3/4 cup shredded carrots
    3/4 cup diced celery
    1 tsp. dried basil
    1 tsp. dried parsley flakes
    4 tbsp. butter or margarine, divided
    3 cups chicken broth
    4 cups diced, peeled potatoes
    1/4 cup all purpose flour
    8 oz. processed American Cheese, cubed (I substituted 2% shredded mild cheddar)
    1 1/2 cups milk
    3/4 tsp. salt
    1/4 tsp. pepper
    1/4 cup sour cream

    In a 3-quart saucepan, brown beef; drain and set aside. In same saucepan, saute onions, carrots, celery, basil and parsley in 1 tablespoon butter until vegetables are tender, about 10 minutes. Add broth, potatoes and beef; bring to a boil. Reduce heat, cover and simmer 10 to 12 minutes or until potatoes are tender.
    Meanwhile, in a small skillet, melt remaining butter. Add flour, cook and stir 3 to 5 minutes or until bubbly. Add to soup; bring to a boil. Cook and stir 2 minutes. Reduce heat to low. Add cheese, milk, salt & pepper. Cook and stir until cheese melts. Remove from the heat; blend in sour cream.

    Crockpot Hamburger Soup

    Crockpot Hamburger Soup

    - 10/9/2010: This was DELICIOUS and SO EASY (especially since I cook my ground beef and freeze it). I didn't add the diced tomatoes for obvious reasons, and I halved the recipe. I also only cooked it for 6 hours and added the green beans and potatoes a couple of hours before we were going to eat it. I think you could use real potatoes and just put them in from the start if you wanted too, but the canned ones worked just fine and were yummy. I really enjoyed it.

    * 1 whole Onion, Chopped
    * 2 pounds Hamburg, Fried
    * 3 cans (14 Oz. Can) Beef Broth
    * 2 cans (15 Oz. Can) Kidney Beans
    * 2 cans (8 Oz. Can) Tomato Sauce
    * 1 can 28 Oz. Can Diced Tomatoes
    * 2 teaspoons Dried Parsley
    * 1 teaspoon Dried Basil
    * ½ teaspoons Thyme
    * ¼ teaspoons Pepper
    * ½ teaspoons Salt
    * 1 Tablespoon Chili Powder
    * 1 can (14.5 Oz. Can) Diced Potatoes
    * 1 can (14.5 Oz. Can) Green Beans, Diced Or String

    Add all ingredients to a crock pot, except the potatoes and green beans. Cook on low for about 6 hours, stirring about every 30 minutes or so.

    After the 6 hours, add the diced potatoes (drained) and the green beans (drained), and cook for another 2 hours on low.

    Serve with crackers or bread, whichever you prefer. The spices in this recipe complement the ground beef, and it is really good. Believe me, before I tried, I never thought a soup made with ground beef would have any flavor.

    Skillet Tacos

    Skillet Tacos

    * 1 pound ground beef
    * 1 small red onion, chopped
    * 1 1/2 cup frozen corn
    * 10 corn tortillas (6 inches), cut into 1-inch pieces (I use my pizza cutter to do this)
    * 1 bottle (8 ounces) taco sauce (I used mild)
    * 1-1/4 cups shredded cheddar cheese, divided

    1. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain.
    2. Rinse frozen corn in a colander with warm water and drain.
    3. Add the drained corn, taco sauce, and 1 cup cheese to meat until well mixed.
    4. Mix in tortilla pieces and heat through.
    5. Sprinkle with remaining cheese. Serves 5-6

    Turkey Fried Rice

    Turkey Fried Rice

    • 1 tablespoon olive oil
    • 2 eggs, beaten
    • 1/2 pound ground turkey
    • 2 green onions, sliced
    • 3 cups cold cooked rice
    • 1 cup bean sprouts
    • 1/4 cup minced fresh cilantro
    • 1/4 cup soy sauce
    • 2 tablespoons creamy peanut butter
    • 1 teaspoon sugar
    • 1/2 teaspoon garlic powder
    • 1/4 teaspoon crushed red pepper flakes
    • 1/4 teaspoon ground ginger
    1. In a large skillet, heat oil over medium-high heat. Pour eggs into skillet. As eggs set, lift edges, letting uncooked portion flow underneath. When eggs are completely cooked, remove to a plate; set aside.
    2. In the same skillet, cook turkey and onions over medium heat until meat is no longer pink. Stir the rice, bean sprouts and cilantro. In a small bowl, whisk the remaining ingredients until blended; stir into skillet. Chop egg into small pieces; stir into skillet and heat through. Yield: 4 servings.

    Simple Sloppy Joe

    * 1/2 cup ketchup
    * 1/3 cup packed brown sugar

    * 12 hamburger buns, split and toasted

    In a skillet, cook beef, onion and garlic over medium heat until meat is no longer pink; drain. Stir in tomato sauce and paste, ketchup, brown sugar and soy sauce; mix well. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes, stirring occasionally. spoon about 1/2 cup meat mixture onto each bun.

    1 tbsp. dried parsley
    1 cup oatmeal, cracker meal, or oat bran
    1 cup skim milk
    1 tsp. salt (optional)
    1/2 tsp. ground pepper
    2 tsp. onion powder
    1/4 tsp. nutmeg

    Preheat oven to 425 degrees. Mix all ingredients. Shape in 1 1/2 inch balls. (Lg scoop from Pampered Chef works great). Arrange on two baking sheets that have been sprayed with non-stick coating. Bake for 12 minutes or until done.
